What do you do if the kids wanted pizza for snacks? Do you give in easily even though you know that pizzas aren't healthy or do you try to tempt your kids with other healthy snack alternatives?

 

Well, it's great if you could make your own pizza with lots of veggies thrown in. What if you didn't have the time but still want to please the kids? I've a great recipe – muffin pizzettas –  that’s perfect for busy moms or even for people who love healthy snack recipes.

 

These small Muffin Pizettas are so popular with my kids any time of the day and best of all, they’re are super quick and easy to prepare, and very yummy!

 

Muffin Mini Pizzas Recipe

(serves 4)

 

Ingredients:

4 English Muffins*

4 slices low-fat ham

8 grape tomatoes

200 grams light cheddar cheese

¼ teaspoon freshly ground black pepper

 

 

How to make mini pizzas:

Preheat a grill and place the grill rack at a low level.

 

Split the English muffins in half; place them cut side down on the grill plate. Place under the grill and cook until crisp.

 

Meanwhile, cut the ham slices, tomatoes in half and slice the cheese.

 

Once the muffins are toasted on the base, arrange the ham, tomatoes and cheese on top. Sprinkle with a little black pepper.

 

Return the muffins to the grill; grill for about 6 to 8 minutes or until the cheese has melted.

 

* In place of English muffins, you can use rice cakes. However, be very careful as rice cakes can burn quickly under a hot grill.
