Parsnip may not be the prettiest root vegetable you find in your local grocery store but did you know that parsnip is relatively low in carbs and have good nutrition?

 

If you love nibbling on french fries but a little concerned about its carb content, then you might want to try this figure-friendly parsnip fries recipe that's super easy, healthy and extremely delicious...Let me just say, they'll soon disappear the minute you serve them! Yup, it's that GOOD!!

Roasted Parsnip Fries with Balsamic Vinegar and Rosemary Recipe

(serves 4)

Ingredients:

2 pounds parsnips, peeled and cut into fry shapes
2 tablespoons olive oil
salt and pepper, to taste
2 tablespoons balsamic vinegar
2 teaspoons fresh rosemary leaves, minced

 

How to make oven-roasted parsnip fries

 

Preheat oven to 425°F.

 

Toss parsnip with olive oil in a bowl, then arrange on a large baking sheet. Sprinkle salt and pepper to taste.

 

Pop the parsnip into the oven and roast, turning once, until golden brown (around 30 to 40 minutes).

 

Meanwhile, combine vinegar and rosemary in a small bowl; set aside.

 

When the parsnip fries are done, drizzle vinegar/rosemary mixture over and toss to coat.

 

Return the fries to oven and continue roasting just until the fries are glazed, around 3 minutes.

 

Adjust the seasonings and serve hot on its own or with your favorite dip. Delish!
