Roasted Chickpeas – Healthy Snacks
By Kate Miller
I've to say that at the moment, chick peas (or garbanzo beans) are one of my favorite
healthy snack items. I like them because of their nutty buttery flavor, and invaluable
nutrient content. Just two to three tablespoons count for 1 portion of the daily
recommended 5 portions of fruit and vegetables.
Chickpeas also contain phytoestrogens, and could reduce the risk of breast cancer,
protect against osteoporosis and minimize hot flushes in post-menopausal women.
This healthy snack recipe is very easy-to-make, inexpensive, and super yummy! Also,
not to mention cholesterol-free!!
Easy Curry Roasted Chickpeas Recipe Ingredients:
1 can (15 oz) chickpeas
1 teaspoon salt
2 teaspoon olive oil
2 teaspoon curry powder*
How to make oven-roasted garbanzo beans
1. Preheat your oven to 425˚F. Line a baking sheet with aluminum foil and set aside.
2. Rinse the chickpeas in a colander, making sure the water is thoroughly drained,
and pat dry with a paper towel. Set aside.
3. Heat olive oil in a skillet over low heat, and add curry powder. Cook, stirring
with a wooden spoon, until fragrant, about 30 seconds.
4. Add chickpeas and salt. Stir well to mix.
5. Transfer chick peas to the prepared baking sheet and spread out in a single layer.
Place on the middle rack of oven.
6. Roast for 30-40 minutes, or until lightly browned. Shake the baking sheet every
10 minutes, until chickpeas are crunchy and golden.
*Variation – red pepper flakes, lemon pepper or ground cumin, or anything that makes
you go mmmmm....
Now, you've a delicious healthy snack to nibble on without guilt!
