Quick and Easy Salmon Bisque

By Rebecca Garcia

I find that the best way to increase fluid intake during the winter months is to incorporate soups into your diet. Soups are nourishing, very filling, keep you warm and can be a complete meal if you throw in starchy tubers such as yam, potato or sweet potato (carbs), some meat (protein) and leafy vegetables (fiber).

I'm sharing my grandma’s old-fashioned recipe to make salmon bisque. The ingredients are inexpensive and it's so easy to prepare – great on cold rainy days or even for late night hunger attacks. This recipe serves 4 hungry bellies.

Salmon Bisque Recipe

Ingredients:

6 oz canned salmon

2 oz butter

2 oz flour

1 quart hot milk

salt and pepper to taste

How to make salmon bisque

Drain the oil from the salmon, remove skin and bones.

Rub salmon through a fine sieve.

Melt butter in a saucepan, stir in flour and, when smooth, add 1½ pints milk.

When it's smooth, stir in the remaining milk and salmon. Cook till boiling, stirring all the time.

Season with salt and pepper to taste. Enjoy your homemade salmon bisque with saltines or bread.
