Rich in omega 3 fats and high in digestible protein, salmon is one oily fish which you should consume regularly. However, many are put off by its rather unpleasant fishy taste.
I know some people soak salmon in milk for no more than 1 hour to remove fishy smell and taste but here's my preferred way – soak salmon in ¼ cup vinegar, lemon juice or wine and water for 10 minutes and then rinse off before cooking.
With a short prep time and simple ingredients, this healthy salmon recipe makes a
great dish for busy moms on weeknights. It's really quick and easy, mouth-
(serves 4)
Ingredients:
4 pieces salmon fish steaks
1 carrot, peeled and sliced thinly
1 large onion, sliced
1½ cups haricot beans, cut into halves
1 tablespoon soy sauce
2 tablespoons butter
½ cup white wine
½ cup fish or chicken stock
Marinate salmon steaks with soy sauce. Set aside
Bring a saucepan of water (add a pinch of salt) to a boil, place haricot beans and cook until just tender. Remove and drain.
Place 2 tablespoons butter in a skillet, pan fry salmon until slightly brown. Remove.
Add carrots, onion, wine and stock to skillet. Cover with a lid and let simmer for 6 to 8 minutes.
Return haricot beans and salmon to skillet; cover and simmer for another minute.
Transfer to a serving platter and serve hot. Best enjoyed with steamed rice and even better with citrus rice pilaf.
