Getting the kids to eat fish is a challenge. My children refuse to eat salmon because of its rather fishy taste. So I have to constantly come up with new ideas and recipes to make fish interesting.
The EPA and DHA in salmon are vital elements for healthy brain growth, and is an
excellent protein for enhancing kids learning. If your children dislike salmon, try
this easy-
(makes 4)
Ingredients:
100g Norwegian salmon, cubed
4 medium size baking potatoes
½ cup sweet corn
shredded mozzarella or cheddar cheese
2 teaspoons honey, optional
1. Scrub and wash the potatoes clean. Leave the skin on.
2. Cut into half. Make potato boats by scooping some portion from the potato halves.
3. Bake on 400˚F oven, to medium done and then keep warm.
4. Mix sweet corn and salmon to make fillings.
5. Stuff the potato boats with fillings and top with cheese.
6. Bake again till done, about 15 minutes.
7. Drizzle honey and serve hot. Enjoy!
