For most Malaysians, Singaporeans, Indonesians and Thais, a meal isn't quite complete without sambal belacan. Belacan is actually shrimp paste made from chilies blended with onions, garlic, a dash of lime juice, and other herbs, namely lemongrass, galangal and ginger.
Although belacan can be revolting to Western palates, this brownish pink paste can leave you salivating for more once you acquired its exquisite taste. For sambal belacan lovers, all it takes is a dollop of this chili paste to make the poorest meal appetizing.
And, one best vegetable which marries perfectly with sambal belacan is none other than ladies finger or okra. If you can't get hold of okra, you may want to use other suitable alternatives such as long beans, eggplant (brinjal), water convolvulus (kangkong) or petai.
Sambal ladies' fingers is so delicious that you can even polish off 2 bowls of steamed rice or porridge with it alone. So, what are we waiting for?
To serves 4 people, you’ll need these ingredients:
250 grams ladies' fingers
1 teaspoon tamarind
3 tablespoons water
¾ teaspoon sugar
fish sauce or salt, to taste
4 tablespoons corn oil
3 tablespoons dried shrimp
2 cloves garlic
6 shallots
4 fresh red chilies, seeds removed
1¼ teaspoons belacan
Wash and dry ladies' fingers. Trim off ends and then cut them diagonally into 3-
Soak dried shrimps in a small bowl of warm water for about 10 minutes or until softened. Rinse well and dry.
Pound the dried shrimps coarsely together with garlic, shallots, red chilies and belcan or grind everything in a food processor.
Next, mix tamarind with water and strain.
Heat corn oil in a pan*, fry belacan mixture until fragrant. Add ladies' fingers,
and stir-
Dribble tamarind juice over ladies' fingers and cook for an additional 1 to 2 minutes. Season with fish sauce or salt to taste. Enjoy!
*Avoid cooking ladies' fingers in a cast-
