Quick and Easy Soda Pop Chicken

I was intrigued when my sister made soda pop chicken last weekend so I decided to give it a go. The whole family loved it! It's quick and easy to make, and the chicken was super moist and juicy. Since there's no need for the oven, this chicken recipe is perfect for summer cooking when you want to keep the kitchen cool.

Soda Pop Chicken Recipe

Ingredients:

4 skinless, boneless chicken breasts
½ cup chopped onion
1 tablespoon olive oil
1 can cola*
1 cup ketchup
⅛ teaspoon garlic powder
salt and pepper, to taste
4½ teaspoons cornstarch
3 tablespoons cold water

How to Make Soda Pop Chicken

1. Heat olive oil in a large skillet. Sauté onion until tender. Add chicken and brown on all sides.

2. Add cola, ketchup, garlic powder, salt and pepper. Cover and simmer for about 25 minutes, or until the chicken breasts are fully cooked.

 

3. Remove chicken from pan. In the same skillet, combine cornstarch and cold water. Bring to a boil, and stir for 1-2 minutes. Return chicken breasts to skillet and heat through. Enjoy!

 

Orange soda, Sprite or rootbeer works just as great for this soda pop chicken recipe.
