Chinese dishes are not usually spicy but those from Sichuan province, do have quite
a bit of chili in them. If you love chow mein and really really like them spicy,
you definitely want to give this easy-
It's egg noodles stir-
The end result is going to leave you feeling like a walking furnace, so be warned! And, it might be a good idea to have a tall glass of chilled barley drink to douse the fire! Now, are you game enough to eat?
(serves 4)
Ingredients:
1 pound fresh egg noodles
20 chili padi, finely chopped
10 dried chilies, ground
1 cup shredded cabbage
1 stalk chives
4 ounces squid
4 ounces shrimp
4 to 8 scallops
1 clove garlic, chopped
15 shallots, finely sliced
cooking oil
2 cups hot water
spring onion, chopped
Chinese parsley
seasonings:
2 tablespoons thick soy sauce
2 tablespoons soy sauce
2 tablespoons fish sauce

Heat oil in a skillet, fry garlic and shallots until fragrant. Add ground chilies
and chili padi, stir-
Add egg noodles and seasonings to skillet. Stir to mix well.
Pour hot water over noodles and stir-
Let noodles simmer for about 2 minutes. Remove lid, add seafood and cover again. This time for 1 minute.
Remove from heat at once when vegetables and seafood are cooked. Transfer to a serving platter; garnish with chopped spring onion and Chinese parsley, and serve hot. Enjoy your noodles!
