Don't you love a steaming bowl of soup on cold winter days to beat the blues away? And, wouldn't it be wonderful if it's low fat, low calorie and spicy to chase the sniffles away? Here's a good spicy pumpkin soup recipe that leaves your tummy full and conscience clean....
Low Fat Spicy Pumpkin Soup Recipe
(serves 4)
Ingredients:
1 medium butternut pumpkin*
1 parsnip, chopped
1 large potato, chopped
1 onion, peeled and cut
1 carrot, chopped
2 cloves garlic
1 teaspoon grated ginger
1 teaspoon curry powder
4 cups water
½ cup low fat plain yogurt
How to make low fat spicy pumpkin soup:
Using a very sharp knife, peel the pumpkin. A large knife is good for cutting larger pumpkins while a small knife is useful for removing seeds.
Always cut away from your body and fingers. Chop the pumpkin flesh roughly.
Put pumpkin, parsnip, potato, onion, carrot, garlic, ginger, curry powder and water in a large saucepan. Cover and bring to the boil.
Reduce heat and let pumpkin soup simmer for 30 minutes, or until all vegetables are tender and about to fall apart.
Using a hand blender, puree pumpkin soup in the saucepan. Alternatively, puree in batches in a blender or food processor. Taste and, if desired, add freshly ground black pepper.
Serve pumpkin soup in bowls with a dollop of yogurt on top or, stir yogurt through pumpkin soup. Serve immediately with crusty bread rolls.
