If you asked me what's one ingredient that could slash your grocery bill, without hesitation, I've to say it has to be eggs. Eggs are really inexpensive but yet incredibly nutritious. Despite their high cholesterol, eggs are great protein choices and, for your information, eggs don't raise risk for heart disease in most people.
For under a dime, one egg gives you 6 grams of high-
What I've here is a easy-
Oh yes, if you've spinach-
(serves 2 to 4)
Ingredients:
2 tablespoons olive oil
3 small red potatoes, sliced
1 cup diced tomatoes
1 cup torn fresh spinach or frozen
2 tablespoons sliced green onions
salt and pepper to taste
1½ teaspoons crushed garlic
1 teaspoon garlic powder
4 eggs
4 tablespoons milk
½ cup shredded Cheddar cheese
½ cup shredded jalapeno jack cheese
Heat olive oil in a medium skillet over medium heat. Season potatoes with garlic powder, salt and pepper, and then place in the skillet.
Cover and cook about 10 minutes until potatoes are tender but firm.
Mix in tomatoes, spinach, green onions, and garlic. Season with salt and pepper to taste; continue to cook for about 1 to 2 minutes or until spinach is wilted.
Beat eggs with milk in a medium bowl; pour mixture over the vegetables and sprinkle with cheeses. Reduce heat to low, cover and cook for 5 to 7 minutes, or until eggs are firm. Delicious!!
