My kids think I'm crazy when I tell them bitter gourds are delicious. Well, I don't
blame them – bitter gourd can evoke the most negative reactions among many people.
The taste of this zucchini-
Today we're making a quick and easy, delicious kids friendly bitter gourd dish. The
pork-
(serves 4)
Ingredients:
1 bitter gourd, cored and sliced thickly
200 grams minced pork
100 grams shrimps, shelled and minced
1 small carrot, finely chopped
1 small onion, finely chopped
1 clove garlic, minced
1 tablespoon cooking oil
1 tablespoon oyster sauce
1 tablespoon plum sauce
1 teaspoon sugar
1½ soy sauce
1 teaspoon sesame oil
1 cup water
pepper, to taste
1 tablespoon chopped spring onion
Place minced pork and shrimp in a mixing bowl; add 1 teaspoon soy sauce, sesame oil and pepper. Mix well and leave to marinate for 20 minutes.
Combine marinated pork mixture with chopped carrot and onion. Mix well.
Stuff the sliced bitter gourd with mixture. Set aside.
Heat cooking oil in a skillet, fry garlic until fragrant. Pour in water and bring to a boil.
Add stuffed bitter gourd and reduce heat to low; let bitter gourd simmer until cooked but not too soft.
Add seasonings; transfer to a serving plate.
Sprinkle chopped spring onion before serving. Enjoy with steamed jasmine rice.
