Sweet Corn Tuna Burgers Recipe

(serves 4)

Ingredients:

2 to 3 slices wholemeal bread, torn

1 7-ounce can  sweet corn, drained

2 6-ounce cans, drained

5 tablespoons grated cheddar cheese

3 stalks spring onion, finely chopped

salt and pepper to taste

1 whole egg, beaten

2 tablespoon olive oil

4 wholegrain bread rolls

lettuce, torn

tomato slices

mustard

How to make tuna sweet corn burgers

Put the bread in a food processor and process into crumbs. Transfer to a mixing bowl, set aside.

Put half the sweet corn into food processor and process until finely chopped.

Combined chopped corn, remaining whole corn, tuna, cheese, spring onions, salt and pepper with the breadcrumbs and mix well.

Add in beaten egg, a little at a time (you need not use all the egg) until the mixture is sticky enough to be shaped into four burgers.

Heat oil in a non-stick pan, fry* burgers for about 4 to 5 minutes on each side until golden and hot through the middle.

Place burger on wholemeal buns together with torn lettuce, tomato slices and some mustard.
