Today, I will show you one really inexpensive easy alternative to meat patties –
tuna potato patty. These tuna-
(serves 4)
Ingredients:
1 can John West Tuna with a twist, oven dried tomato & herb
1 small onion, finely diced
1 small green capsicum, finely diced
1 large potato, boiled and peeled
salt and pepper, to taste
1 large egg, beaten
6 tablespoons olive oil
How to make potato cakes:
Drain excess liquids from canned tuna. The tuna should be not be damp.
In a bowl, mash potato and mix in onion as well as capsicum. Season with salt and pepper to taste.
Add tuna to mashed potato mixture; mix well.
Divide tuna mixture into 4 or 8 equal portions, depending on your preference, and shape into patties.
Heat olive oil in a non-
Fry tuna patty on one side for about 2 to 3 minutes or until golden brown. And then flip over to fry the other side. Enjoy your tuna potato cakes!
