To most families, turkey is synonymous with Thanksgiving. However in our family, we enjoy turkey at any time of the year, not reserved just for the holidays. Turkey can be used in almost any recipes; it makes a healthy red meat substitution as it is low in fat and yet high on taste. One serving of turkey breast without skin has only 161 calories, 4 grams of fat and 30 grams of protein.
Turkey meatloaf is easy to prepare, economical and good as a one dish meal. This turkey meatloaf recipe which I am going to share with you is delicious, moist and flavorful. And, I know your family and friends are going to love it! So, let's get busy.......
(serves 4)
Ingredients:
2 cups stuffing mix
2 cups chicken stock
2 pounds ground turkey*
2 Gala apples, skinned and diced
½ cup chopped celery
½ cup onion
½ chopped mushrooms
½ teaspoon dried oregano
2 tablespoons barbecue sauce or chili sauce
salt and black pepper to taste
1 egg
2 tablespoons olive oil
Preheat the oven to 350˚F. Grease a loaf pan, set aside.
Combine chicken stock and stuffing mix in a bowl, mix well so that the stuffing mix absorb the stock.
Put remaining ingredients except olive oil in another bowl. Then add in soaked stuffing mix and blend everything using your hands.
Press mixture into greased loaf pan and pat down to even it out. Coat with olive oil and bake for about 1 to 1½ hours until the top is nicely browned or center is no longer pink (use a skewer to test). Serve meatloaf slices with mashed potato and your favorite salad.
* You can use all white turkey meat or a mix or dark and white turkey meat
